The main ingredients are: 3 cups thick poha (flattened rice), Water, as needed, Prepared tadka, ½ tbsp sugar, Salt, to taste, 2 tbsp milk, For the Tadka:-, 1½ tbsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds, ½ tsp fennel seeds, 2 green chilies, chopped, 2 sprigs curry leaves, ¼ tsp turmeric powder, A pinch of asafoetida (hing), Other Ingredients:-, Water, for steaming, 2–4 green chilies (less spicy, slit lengthwise), For the Jeeravan Masala:-, 1 tbsp fennel seeds, 3 tsp cumin seeds, 1 tbsp coriander seeds, 1 tbsp black peppercorns, 6–7 cloves, 1 blade mace, ¼-inch cinnamon stick, 6–7 bay leaves, 10–12 green cardamoms, 3–4 dried Kashmiri red chilies, broken, ¼ nutmeg, Salt, to taste, 2 tsp black salt, 2 tsp dry ginger powder, A pinch of turmeric powder, ¼ tsp asafoetida (hing), For the Masala Peanuts:-, 2–3 tsp oil, ½ cup peanuts, ¼ tsp degi red chili powder, Salt, to taste, For Garnishing:-, Prepared poha, Masala peanuts, Slit green chilies, Ratlami sev, Masala boondi, Nylon sev, Pomegranate pearls, ½ tsp prepared Jeeravan masala, Fresh coriander leaves, chopped, Lemon wedges, Jalebi.
